Abstract
The process of using enzymes to prepare co11agen polypeptide from limed hide offal is described. The factors influencing the processes of hydrolysis were investigated. Determination of molecular weight distribution and isoelectric point etc, allowed us to conclude that the hydrolyzed products of cattle hide prepared using proteases are mainly concentrated at a certain molecular weight, and that the molecular weight distribution of the products depends on the processes of hydrolysis and kinds of enzyme used.
