Technological Value Of Hides Of Crossbreeds From Black-And-White Cows With Beef Bulls Of Piemontese, Chianina And Marchigiana Breeds

Abstract

In this study the quality was assessed of skins of crossbred young bulls from Black-and-White cows x bulls of Italian meatbreeds (Piemontese, Chianina, Marchigiana). The hides were tanned and their value was assessed in technological groups. The highest coefficient of skin surface area efficiency and best physico chemical and organoleptic traits were displayed by crossbred bulls from Black-and-White cows x Piemontese and Chianina bulls. The high value of their hides was characterised by correct softness and fullness in handle, firm flanks and groins, and smooth grain.
