Abstract
A comparative study of alkali and enzymic conditioning of “twinned” hide from calves, young and aged animals yielded some unique gelatines from the point of view of gel strength and isoelectric point (PI). The effect of collagen cross-linking with animal age was quantified. A preliminary examination of the gelatines by polyacrylamide gel electrophoresis and gel permeation chromatography yielded results from which it was possible to suggest a peptide-type collagen cross-link developing with animal age.
