Abstract

In this paper a model is presented to describe the kinetics of the hydrolysis of blue shavings by hot calcium hydroxide solutions. We conclude that above 40°C the reaction velocity is controlled by chemical reaction, the diffusion of OH^– inside the shavings being a fast process. Temperatures below this limit are of no technical interest and were not investigated. In the proposed model the conversion of splits into soluble proteins (fraction of hydrolysed shavings) is expressed as a 3^rd degree polynomial, where the independent variable is time and the coefficients are functions of temperature.
